Grape selection and wine elaboration
From the arrival of the grapes to the winery, a different production method starts compared to the rest of the wineries in the world. An elaboration by gravity, where the grape flows throughout the whole process by its own weight without being forced and aggressively pushed by pumps. In Bodegas Resalte we consider this method an extension of the dedication and work we do in the vineyard and respect for our raw material.
This elaboration system is used throughout the vinification, and results in a selective, powerful and respectful extraction of the best essences and aromas of our grapes. Since each vineyard is different, we separate them into different deposits, on which we will maintain an exhaustive temperature control, a daily analytical control and a periodic tasting of the tanks that will give us information about the ideal time to make the grape lifts with the ovi.
In each tank we separate different types of grapes, which will be worked individually to get the best possible wine from each one. This elaboration improves the quality of the wines and highlight the work done in the vineyard: complex and elegant wines.
